Chocolate Apple Crumble Cake

An easy chocolate cake to whip up and perfect to bake with apples that need using!

- 90 g (¾ cup) wholemeal flour (I like wholemeal spelt flour)
- 30 g (¼ cup) natural cocoa powder
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs
- 100 g (½ cup) soft brown sugar
- 65 ml vegetable oil
- 1 cored diced apple (I like the skin on for easiness)
Crumble Topping
- 60 g (½ cup) flour
- 100 g (½ cup) brown (or white) sugar
- 20 g (¼ cup) rolled oats
- 70 g (¼ cup) nuts chopped (I like walnuts and almonds)
- ½ teaspoon each of mixed spice and cinnamon
- 110 g (½ cup) butter, melted
Preheat oven to 180C (350F) and line a 8 inch spring form baking tin with baking paper.
In a medium sized bowl, whisk the flour, cocoa powder, cinnamon, baking powder, and salt until combined. Toss the apple pieces with 1 tablespoon of the flour mixture and set aside.
In another bowl, add eggs and sugar. Using a hand mixer, beat until thick and glossy. With the mixer still on, slowly drizzle the oil in.
Gently fold the wet mixture into the dry mixture until just combined. Add the apple pieces and continue to fold. Add crumble topping.
Pour mixture into prepared cake tin and bake for 20- 25 minutes or until a toothpick inserted comes out clean.
