  • 20 ml (1 tablespoon) golden syrup
  • 125 g (1 cup) plain flour
  • 1 teaspoon baking powder
  • 85 g (1 cup) desiccated coconut
  • 112 g (½ cup) caster sugar
  • 110 g (1 cup) rolled oats
  • 150 g (about ¾ cup) dried apricots, diced
  • 1 large egg slightly beaten
  • 2 teaspoons vanilla extract

  • Preheat oven to 180C (355F). Grease a 20cm x 30cm (9 x 13) slice pan and line pan with baking paper.
  • Melt butter and golden syrup in a small saucepan over a low heat, stirring occasionally. Remove from heat when butter has melted.
  • In a large bowl, combine flour, baking powder, coconut, caster sugar, oats and apricots and stir together until well combined. Add the cooled butter mixture, slightly beaten egg and vanilla to dry ingredients and stir until well combined.
  • Press the mixture into the prepared pan using the back of a spoon and bake for 15-20 minutes or until golden brown. Cool in pan and then cut into 24 squares or 12 large bars.
