Easy Self Saucing Plum Pudding

This Easy Self-Saucing Plum Pudding is a comforting, fuss-free dessert that’s perfect for any occasion. Sweet, spiced plums sink into a tender sponge, creating a rich, syrupy sauce as it bakes. Serve warm with cream or custard for a cozy, indulgent treat that everyone will love.

Ingredients
  

  • 180 g (1 ½ cups) plain flour
  • 2 teaspoons baking powder
  • 100 g (½ cup) white sugar
  • Pinch of salt
  • 75 g (⅓ cup) butter, melted and cooled
  • 1 egg
  • 125 mls (½ cup) milk
  • 1 teaspoon vanilla extract
  • 500g 14 plums (approx. or 850g canned plums*), roughly chopped with stones removed
  • 150 g (¾ cup) soft brown sugar
  • 250 mls (1 cup) hot water

Instructions
 

  • Preheat oven to 180C (355F) and grease a 6-8 cup capacity, shallow oven-proof baking dish.
  • In a medium sized bowl, sift flour, baking powder, sugar and salt. Whisk until combined.
  • In a small bowl, whisk butter, egg, milk and vanilla until combined and fold into flour mixture, until there are no lumps. Add plums and pour mixture into prepared baking dish.
  • Sprinkle brown sugar over the plum pudding then pour hot water over the back of a spoon all over the pudding (this creates the sauce). There should be enough room for the pudding to rise in the dish (i.e. don't fill over ⅔ full to avoid boiling over). Bake for 35-40 minutes or until golden and bubbling. Serve with fresh cream or ice cream.

Notes

* If using canned plums, drain them first. You may also need to decrease the amount of sugar in the sauce from ¾ cup to ½ or ¼ cup (or to taste) as canned plums often have added sugar. Don't forget to check for stones in the canned plums too! ;)
