Spiced Pumpkin Bread With Crumble Topping

A moist and soft pumpkin bread, enriched with spices and topped with a crunchy crumble topping. A perfect autumn snack!

Ingredients
  

  • 100 g (⅔ cup) plain all purpose flour
  • 100 g (¾ cup) wholemeal flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon mixed spice
  • ¼ teaspoon salt
  • 200 g (1 cup) granulated sugar
  • 90 g (½ cup) oil
  • 70 g (⅓ cup) yoghurt (or buttermilk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree *

Crumble Topping

  • 60 g ½ cup flour
  • 100 g ½ cup brown (or white) sugar
  • 20 g ¼ cup rolled oats
  • ½ teaspoon each of mixed spice and cinnamon
  • 110 g ½ cup butter, melted

Instructions
 

  • Preheat oven to 175C (350F) and line a 21.5cm x 8cm (8.5 inch x 3.5 inch) inch loaf tin with baking paper.
  • In a large bowl, sift together the plain and wholemeal flour, baking powder, baking soda, cinnamon, mixed spice and salt. Whisk to combine and set aside.
  • In a medium sized bowl, whisk together the sugar, oil, youghurt, eggs, extract and pumpkin puree until well combined.
  • Make a well in the center of the dry mixture and add the wet mixture, folding gently to just combine. Be careful not to over-mix.
  • Pour the mixture into the prepared loaf tin and sprinkle the crumble topping over the batter.
  • Bake in the preheated oven for 50-60 minutes or until a skewer comes out clean.
  • Let the bread sit in the tin for 15 minutes before inverting the bread onto a wire rack. Once completely cool, cut into slices.

To make crumble topping

  • Combine all ingredients in a bowl and mix well to combine.

Notes

* You can buy pumpkin puree from the supermarket, or if you’re like me, you can make your own: Place 300g peeled pumpkin with ¼ cup water in a small pan. Bring to the boil then simmer for 5-10 minutes or until cooked. Drain the water, and mash the pumpkin with a fork whilst warm or blitz with a whizz until smooth. Cool before using.
* This bread keeps for 3-4 days in an airtight container – but it’s unlikely it will not last that long 😉
