Ambrosia Dessert

This ambrosia dessert is the easiest and fastest no-bake recipe you could ask for.

It is the perfect dessert to bring for a potluck dinner when you have nothing planned, or for when you just want something delicious and in a hurry.

Ambrosia is definitely an old school NZ dessert but I think it has to be up there with one of my favourites. This recipe is a slight twist on the traditional coconut, mandarin flavoured ambrosia and is a lot quicker (and tastier in my opinion!).

I love this recipe because...

It can be made ahead of time.

It's always handy having food prepared in advance before guests arrive. I find that this ambrosia is best after it has had time to sit in the refrigerator for an hour or so.

I had the house to myself last night so invited some girlfriends around for a little treat night and we ate ambrosia out of these little tea cups. I think the teacups made the ambrosia taste even better…

What makes this recipe so easy?

Only a few ingredients are need to prepare this dessert and most of them come in a packet which are poured, scooped or tipped straight into a bowl. The most "effort" that is required is cutting up the marshmallows - but you could absolutely leave them whole if preferred.

Ingredients:

Cream - full fat

Berry flavoured yoghurt - or any other flavour you like (could also be plain)

Frozen berries - or fresh!

Marshmallows - I like Pascalls best

A few grated freeze dried boysenberries (optional)

How to make ambrosia

  1. Whip cream
  2. Add yoghurt, berries + marshmallows
  3. Chill

It's as easy as that!

Easy Ambrosia Variations

I love using frozen berries as I don’t always have fresh berries on hand, but fresh berries work just as well too. If you don’t have any fresh/frozen berries on hand you could use any tinned fruit with any flavoured yoghurt. Here are some ideas:

1. Tropical Ambrosia
Mango, pineapple, and passionfruit with coconut yoghurt or cream. Add toasted coconut for extra flavour.

2. Peach & Apricot Ambrosia
Fresh or canned peaches and apricots with vanilla/apricot yoghurt and marshmallows. A sprinkle of toasted almonds works well too.

3. Apple Crumble Ambrosia
Soft apple pieces, cinnamon, marshmallows, and crushed biscuits or granola for a crumble-style twist.

4. Chocolate Ambrosia
Banana or strawberries with mini marshmallows, chocolate chips, and chocolate yoghurt or cream.

A creamy no-bake dessert which is loaded with berries and marshmallows. It only takes a few minutes to whip up making it the perfect quick dessert for sharing.

Servings 5 people

Ingredients
  

  • 250 mls (1 cup) cream
  • 500 g (2 cups) berry flavoured yoghurt
  • 1 ½ cups frozen berries or to taste
  • 120 g (1 cup) chopped marshmallows
  • A few grated freeze dried boysenberries optional

Instructions
 

  • In a large bowl, whip cream until soft peaks form. Fold in yoghurt, berries and marshmallows. Chill in the fridge for at least 30 minutes before serving.
  • Top with freeze dried berries if desired.
