I know what you’re thinking:

“Sarah, there’s no way a healthy Bounty bar could taste like the store-bought kind.”

But trust me—they do. Creamy, coconutty, and coated in dark chocolate, they’re just as satisfying (if not more so!) than the originals. Made with wholesome ingredients and healthy fats, they’re a treat you can actually feel good about eating.

I first whipped up a batch while visiting family in London years ago, and they’ve been a firm favourite ever since.

Ingredients & Why They Matter

I love how few ingredients are used to make something so delicious!

  • Coconut cream - provides the creamy, rich texture and authentic coconut flavour, mimicking the traditional Bounty bar filling.
  • Vanilla extract- enhances the overall flavor, adding a warm, sweet undertone that complements the coconut.
  • Coconut oil - adds healthy fats, helping to bind the ingredients together and giving the bars a smooth, melt-in-your-mouth texture.
  • Maple syrup (or sweetener of choice) - acts as a natural sweetener, giving the bars a touch of sweetness without refined sugar.
  • Salt - balances the sweetness and enhances the coconut and chocolate flavours.
  • Desiccated coconut - provides the signature coconut flavour and chewy texture, creating the satisfying bite in the bars.
  • Dark chocolate - coats the bars, giving them a rich, indulgent finish while adding antioxidants and a deep chocolate flavour. You could use milk, semi-sweet of dark (however it will only be dairy free or vegan if is dark chocolate or if it states so on chocolate packaging).

Note about coconut cream

It must be coconut cream and not coconut milk. Try to use as much of the fat as you can and not too much of the liquid. If it’s warm where you live, put the coconut cream in the fridge until the fat sets slightly so that you can scoop it out.

Instructions

Line a 23cm x 15cm (9 x 5.5-inch) container with baking paper.

In a saucepan, combine coconut cream, vanilla, coconut oil, maple syrup, and salt over medium-low heat. Stir until melted, then mix in desiccated coconut.

Press mixture into the prepared container and refrigerate or freeze for 1-2 hours until firm. Once cut into bars, return to the freezer.

Melt chocolate and dip the bars one by one until well coated, then set on baking paper to cool and set.

Storage

Store the bars in an airtight container in the fridge for up to 1 week — this keeps them firm and fresh. For longer storage, you can freeze them for up to 3 months. Just let them sit at room temperature for a few minutes before eating for the perfect texture. Eating them straight from the freezer is fun for a hot summer snack!

FAQ

Can I use sweetened shredded coconut instead of desiccated coconut?

Yes, but keep in mind it will make the bars sweeter and possibly more moist. You may need to reduce the added sweetener slightly.

Do I have to coat them in chocolate?

Nope! They're delicious even without the chocolate coating — just more of a coconut bar. But the chocolate adds that classic Bounty flavour.

How do I stop the chocolate from cracking when I bite into them?

Let the bars sit at room temperature for 5–10 minutes before eating — this softens the chocolate shell slightly for a smoother bite.

Ingredients
  

  • 260 g (1 cup) coconut cream
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut oil
  • 4 tablespoons maple syrup or sweetener of choice
  • ¼ teaspoon salt
  • 160 g (2 cups) desiccated coconut
  • 250 g dark chocolate chopped into pieces

Instructions
 

  • Line a container, loaf tin/tray (approximately 23cm x 15cm (9inches x 5 + ½ inches) in size) with baking paper. Set aside.
  • In a medium sized saucepan, add coconut cream, vanilla, coconut oil, maple syrup and salt. Place over a medium to low heat and stir to combine, making sure the coconut cream and oil have melted completely. Add desiccated coconut and stir to combine.
  • Press mixture into prepared container/tin and refrigerate or place in the freezer until it firms up slightly before cutting into bars (approximately 1-2 hours). Once the bars are cut, put them back in the freezer to keep the bars cold whilst preparing the chocolate.
  • Melt chocolate over a double boiler (or in the microwave in 20 second increments). Using one spoon and a fork, dip the bars in the chocolate (one at a time) until well coated and leave to set on a piece of baking paper.
  • Store in the fridge in an airtight container.
