Healthy Apricot Almond Slice

Only 4 ingredients are needed to make this healthy apricot almond slice! Dairy free, sugar free, gluten free and egg free - this recipe is perfect for anyone with dietary restrictions. It's also an ideal, healthy snack to tuck into your children's lunch boxes!

I love to fill my girl's lunchboxes with healthy snacks that aren't loaded with sugar or unnecessary additives (like these vegan chocolate brownies, healthy peanut butter bars or these healthy chocolate brownies. That's what inspired me to make this recipe - it ticks all the boxes and is so easy to whip up.

Ingredients

It doesn't get much simpler than 4 ingredients!

  • Apricots - dried and chopped
  • Coconut - desiccated is best
  • Almond meal - make your own by blitzing almonds in a NutriBullet/blender or use store bought
  • Oil - I love to use coconut oil for this recipe

How to make as a slice

Line a 20x20 baking pan with baking paper. Place all ingredients into a food processor and pulse until the mixture comes together and resembles breadcrumb consistency.

Press into the lined tin and chill for 2-3 hours. Cut into slices.

Note: If you would like thicker slices, use a smaller baking pan.

How to make into bliss balls

Place all ingredients into a food processor and pulse until the mixture comes together and resembles breadcrumb consistency.

Roll mixture into walnut-sized balls until there is no mixture left.

Variations

Get creative! There are no rules with this recipe.

  • Add nuts - add in extra chopped nuts for a bit of texture
  • Vanilla - add a dash of vanilla extract before blitzing for a different flavour
  • Chocolate - dip slice or bliss balls in melted chocolate for a decadent treat

Storage

Store the slice or bliss balls in the fridge in an airtight container for up to 1 month or freeze for up to 3 months.

Ingredients
  

  • 250 grams dried apricots coarsely chopped
  • 1 cup desiccated coconut
  • 1 cup almond meal or wheatgerm
  • 3 tablespoons oil e.g. coconut, canola etc.

Instructions
 

  • Line a slice tray with baking paper (I find it helpful to grease the tray slightly first to help the paper to stick).
  • Place all ingredients into a food processor and pulse until the mixture comes together and resembles breadcrumb consistency.
  • Press mixture into the prepared slice tray and sprinkle with extra coconut (optional). Chill for at least 2-3 hours before cutting into squares
