I love rocky road and always have. I usually make this chocolate one (which is so good) but I the other day I just felt like making one with white chocolate, for a slightly different look and flavour. That's when this recipe was born!

Ingredients

Nearly all ingredients can be substituted (except the white chocolate). Use whatever you have on hand. For example, if you don't have almonds, use cashews/pistachios/peanuts/brazil nuts (you get the drift!)

White chocolate- white chocolate melts are fine.
Marshmallows - Try to avoid mini marshmallows as the bigger ones look prettier when cut (I think). I personally like Pascall marshmallows best for this recipe.
Cookies - use any that you have on hand (e.g. oreos, chocolate chip, vanilla). I use chocolate digestives.
Almonds - Or any other nut of your choice (cashews/pistachios/peanuts/brazil nuts etc.)
Dried cranberries - I chose cranberries for their red colour but you could use glazed cherries or any other red sweet/lolly.
Coconut - This helps create a chewy texture and helps to 'bulk' out the rocky road, making it go further.

Instructions

This recipe takes no time at all!

Simply line a 20cm x 30cm tin with baking paper.

Melt white chocolate, then stir in remaining ingredients. Pour into the tin, sprinkle with extra coconut, and refrigerate for 1–2 hours until set. Slice and enjoy!

Hint: When melting the white chocolate...

To melt the white chocolate without it seizing, you can do one of two things:

  1. Use a double boiler: place chopped white chocolate in a heat proof bowl over a pot of simmering hot water. Stir until completely melted.
  2. Melt in the microwave: In 20 second increments melt the white chocolate in a heat safe bowl (not metal) until chocolate is melted (stir in-between increments).

How to make as a gift

Personally I love an edible gift and it doesn't get much easier to make an edible gift than this white chocolate rocky road.

Packaging ideas:

Cellophane - cut a square of cellophane and place 4 - 5 large pieces of white rocky road in the middle. Pull the four corners of the cellophane towards the middle, twist and tie with a beautiful ribbon or fancy string. Make a tag to attach or add some dried or fresh flowers to the ribbon.

Glass jars - place pieces of rocky road in a clean glass jar and seal with a lid. Add some ribbon and a gift tag.

Cellophane bags - place pieces of white rocky road into the bags and tie with ribbon and gift tag.

Gift box - use a small cardboard gift box to place the rocky road in and add ribbon

How to Store White Chocolate Rocky Road

Fridge:
Store in an airtight container in the fridge for up to 3 weeks. Keep it chilled to maintain the shape and texture, especially in warmer weather.

Freezer:
Rocky road freezes well! Wrap slices individually or place in layers with baking paper between them. Store in an airtight container or zip-top bag for up to 2 months. Thaw in the fridge or at room temp before serving.

Top Tip

For clean and neat slices, use a sharp knife warmed under hot water and wiped dry between cuts.

Ingredients
  

  • 580 g white chocolate
  • 1 cup marshmallows roughly chopped
  • 4 chocolate digestives cookies or any cookie of choice, broken into pieces (e.g. shortbread, superwines, oreo etc.)
  • ¾ cup almonds chopped
  • ¾ cup cranberries
  • ½ cup coconut plus extra for sprinkling on top

Instructions
 

  • Line a 20cm x 30cm tin with baking paper, allowing excess for easy removal later.
  • Melt white chocolate over a double boiler or in the microwave in 30 second increments.
  • Add all other ingredients and stir to combine.
  • Pour into prepared tin and sprinkle extra coconut on top. Refridgerate for 1-2 hours or until set. Chop into pieces and serve.
